XXL Oat Cookie

Ingredients

1 really ripe banana

3 dates

1/4 cup water

1/4 cup oats

50 g PB2 peanut butter

2 scoops neutral protein powder (optional)

2 tablespoons vegan bitter chocolate chips

1/4 cup walnuts

2 tsp of cinnamon

2 tsp baking powder

pinch of salt

 

Method

  1. Pre-heat oven to 180 (or use air fryer on 180 for 12 minutes)
  2. Mash the banana 
  3. Blend 3 dates with water in a high speed blender then add to banana and mix
  4. Add oats to the batter
  5. Add PB2 peanut butter, protein powder, cinnamon, baking powder and salt and mix
  6. Then add walnuts and chocolate chips
  7. Mix until well blended, then scoop onto a baking sheet and flatten into a round disc
  8. Bake in oven or in air fryer for 12 minutes

 

This is a great tasty dessert with lots of fiber, protein, and sweet caramel flavor! A great way to boost your protein in between meals or after a workout while satisfying your sweet tooth 😋
