XXL Oat Cookie

1 really ripe banana
3 dates
1/4 cup water
1/4 cup oats
50 g PB2 peanut butter
2 scoops neutral protein powder (optional)
2 tablespoons vegan bitter chocolate chips
1/4 cup walnuts
2 tsp of cinnamon
2 tsp baking powder
pinch of salt
Method
- Pre-heat oven to 180 (or use air fryer on 180 for 12 minutes)
- Mash the banana
- Blend 3 dates with water in a high speed blender then add to banana and mix
- Add oats to the batter
- Add PB2 peanut butter, protein powder, cinnamon, baking powder and salt and mix
- Then add walnuts and chocolate chips
- Mix until well blended, then scoop onto a baking sheet and flatten into a round disc
- Bake in oven or in air fryer for 12 minutes
This is a great tasty dessert with lots of fiber, protein, and sweet caramel flavor! A great way to boost your protein in between meals or after a workout while satisfying your sweet tooth 😋
