Tofu Scramble with Spinach and Red Pepper

Tofu Scramble
Ingredients
250 grams firm Tofu
3-4 tsp of Tumeric
scallions
1 garlic clove
1 red pepper thinly sliced
Handful of Spinach
1 medium red onion diced
3 tsp Black salt (mimics the taste of eggs)
pinch of salt for taste
2 tablespoons olive oil (optional for cooking or omit and use a non-stick pan)
 
  • Add 1 tablespoon of olive oil to a nonstick pan and add diced onions, cook on medium until translucent 
  • Then add garlic and simmer on low with a lid until spinach is cooked through.
  • In a separate pan, add 1 tablespoon olive oil and red peppers and cook until tender
  • Crumble the block of tofu and add to the red peppers
  • Add tumeric, black salt and salt and cook while constantly mixing until all sides of the tofu are coated with seasoning and lightly toasted.
  • Then top with the scallions and mix them into the scramble to  slightly "soften" them
  • Then add the spinach to the tofu scramble and enjoy!
