Tofu Scramble with Spinach and Red Pepper

250 grams firm Tofu
3-4 tsp of Tumeric
scallions
1 garlic clove
1 red pepper thinly sliced
Handful of Spinach
1 medium red onion diced
3 tsp Black salt (mimics the taste of eggs)
pinch of salt for taste
2 tablespoons olive oil (optional for cooking or omit and use a non-stick pan)

Add 1 tablespoon of olive oil to a nonstick pan and add diced onions, cook on medium until translucent
- Then add garlic and simmer on low with a lid until spinach is cooked through.

In a separate pan, add 1 tablespoon olive oil and red peppers and cook until tender

Crumble the block of tofu and add to the red peppers

Add tumeric, black salt and salt and cook while constantly mixing until all sides of the tofu are coated with seasoning and lightly toasted.

Then top with the scallions and mix them into the scramble to slightly "soften" them

Then add the spinach to the tofu scramble and enjoy!
